The Backcountry Kitchen

At Axis Wild, we believe great food is an essential part of a great adventure. Here's a little look behind the scenes at what goes into creating our backcountry dining experiences.

Food Is More Than Fuel

Nutrition is an essential part of any wilderness adventure. While food provides the energy we need to keep moving, a hearty, delicious meal can also do wonders for the spirit and overall group morale.

We want our guests to feel well-fed and energized throughout their journey. Adequate calories not only fuel our bodies for long days on the trail but also help us maintain body temperature and stay warm when the mountain air turns cold.

One thing you can count on at Axis Wild is thoughtfully planned meals, ranging from familiar favorites to unexpected flavor combinations- and perhaps even a new recipe to bring home! There's nothing quite like seeing the delight on our guests' faces as they sit down to a satisfying meal after a day of adventure.

Creativity Through Simplicity

There are many ways to elevate a meal, even in the rugged backcountry, and we embrace the challenge with artistry and skill.

It all begins with the menu. Our guides thoughtfully curate their own culinary experiences, considering the group's dietary needs while creating delicious, varied menus that balance the nutritional essentials: carbohydrates, fats, and proteins.

Cooking in the wilderness calls for creativity and resourcefulness. With limited equipment and ingredients, a little ingenuity goes a long way. Simple additions like fresh herbs, aromatic spices, flavorful sauces, or an unexpected pairing can transform an ordinary meal into something special. And because we eat with our eyes first, a little attention to presentation can make all the difference.

While there are plenty of ingredients that can take a dish to the next level, we believe the most important ingredient is the love that goes into preparing it.

Pack-Supported vs. Backpacking Cuisine

Our different trip styles offer unique opportunities to get creative in the backcountry kitchen.

On our pack-supported adventures, having our gear and food transported by pack animals opens up a whole new world of culinary possibilities. Insulated coolers allow us to transport fresh, perishable ingredients deep into the wilderness, while the additional carrying capacity means we can bring more elaborate cooking equipment and a few extra culinary luxuries. From fresh vegetables and quality cuts of meat to delicious appetizers and thoughtfully prepared multi-course meals, these trips allow us to create a gourmet dining experience in the heart of the backcountry.

On our backpacking adventures, where everything we need travels on our backs, meals require a different approach. Lightweight, dehydrated, and shelf-stable ingredients become the foundation of our menus. But that doesn't mean sacrificing flavor! We're known to sneak a few fresh treats into our packs, whether it's herbs, vegetables, or gourmet cheese. They might add a little extra weight, but the payoff when its time to eat is well worth it.

Regardless of the trip style, one thing remains the same: the thoughtfulness, creativity, and care that go into every meal.

Around the Backcountry Table

Food nourishes more than our bodies. It provides comfort, lifts our spirits, and has a wonderful way of bringing people together.

After a long day on the trail, there's something especially satisfying about gathering around a warm, delicious meal. It's a time to relax, reflect on the day's adventures, share stories, and enjoy the company of fellow travelers.

Some of our favorite moments in the backcountry happen around the dinner table- or perhaps a circle of camp chairs overlooking an alpine lake. The conversations flow, laughter is shared, and connections deepen over a shared meal.

For us, that's what the backcountry kitchen is really about. Good food, good company, and the simple pleasure of sharing both in the wild.
